When summer rolls around - I'm always all about the vegetables. My favorite vegetable is okra but a close second is zucchini. I love zucchini because there are so many things you can do with it. I have found myself cooking zucchini non stop lately so I thought I would share some of my favorite ways to fix it. One thing I didn't include is Zoodles. If I make the kids spaghetti - I always make Scott and I zoodles and add a little sauce or pesto. I get mine already made at the grocery store.
In the summer, I grill most nights. Its usually always meat and a vegetable. I love making vegetable kabobs. Zucchini, squash, onions, peppers and mushrooms. I will put a little olive oil and salt or Tony's seasoning on them and grill until they have brown edges. It's so delicious!
I have a favorite Arkansas restaurant (Local Lime) and they have a salsa that I dream about. It's Zucchini salsa. I found a recipe that is CLOSE. It's not exact but it's good.
ingredients
- 2 medium zucchini, halved lengthwise.
- 1 handful cilantro, coarsely chopped.
- 1 jalapeno, coarsely chopped.
- 2 cloves garlic.
- 1/4 cup pepitas, toasted.
- 1/4 cup olive oil.
- 1/2 lime, juice.
I roasted the zucchini at 350 for maybe 15 minutes - just until soft. And then blend all the ingredients in a food processor. Top with the pepitas. It's great with chips or plantain chips.
I love to slice zucchini and roast in the over with olive oil and salt or maybe a little parmesan cheese. I just cook for 25 minutes at 425 degrees. But I also love to do the same but put in a foil packet on the grill. I usually leave on grill for about 30 minutes and flip the packet at least once.
I also love what I call a zucchini salad. I peel a zucchini into strips and then mix up olive oil, lemon juice and fresh chopped basil and pour over the zucchini. It's so light and refreshing.
