I delayed "Show us your Life" until today because it's Labor Day weekend and this is as good a time as any to share your favorite breakfast recipes.
Life is getting back in the full swing this week and if you are like me, you need quick and easy and healthy breakfast ideas for your family (unless you just throw pop tarts to the back seats of the car on the way to school and in that case - there is NO judging here!)
Also we all have company come in or events to go to where you need a great breakfast recipe. So share away!!!!

One of my favorite easy casseroles is just a simple breakfast casserole my friend Kacy shared with me several years ago.
BREAKFAST CASSEROLE
Ingredients:
1 pkg Crescent rolls
1 lb pork sausage
4-6 eggs
1 cup milk
2-3 tsp Tony Chachere's Creole seasoning
8 oz shredded cheddar cheese
Spread the crescent rolls out in a baking pan. Brown sausage and put on top. Mix together eggs and milk and Tony Chacere's (to taste - more if you like spicy). Top with cheddar cheese. Bake at 350 for 45-60 minutes.
Chocolate Chip Banana Muffins
(I adapted this recipe from Skinny Taste and my girls LOVE these. I make them into mini muffins.)
Ingredients:
- 3 ripe medium bananas
- 1/3 cup unsweetened apple sauce
- 1 1/4 cups white whole wheat flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp butter, softened
- 1/3 cup brown sugar
- 2 large egg whites
- 1/2 tsp vanilla extract
- 1 1/2 oz mini chocolate chips
- Smart Balance baking spray
Directions:
Preheat oven to 325°. Spray a non-stick loaf pan with cooking spray.
Mash bananas in a bowl, set aside. In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.
In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce, vanilla; beat at medium speed until thick. Scrape down sides of the bowl. Add flour mixture, then blend at low speed until combined. Fold in chocolate chips. Do not over mix. Pour into mini muffin pan and bake for 20 minutes. Makes 24-30 mini muffins.
