Comfort Food with Campbell's Soup

I threw a Christmas lunch recently for some friends.  It's been a long time since I entertained and I thought it would be fun to make a good lunch on my Christmas dishes.

I knew I wanted to make one of my favorite things to eat - Hashbrown Casserole.  This is something my mom always made at the holidays and for special meals and now I always want it.  It's a true comfort food for me.

I feel like all my comfort foods include Campbell's cooking soups as ingredients. From old family favorites to fresh, new recipes - you can find so many ways to use Campbell's soup in your meals.

Ingredients:

2 lbs frozen hashbrowns
1/2 cup butter, melted
8 oz sour cream
2 cans Campbell's cream of chicken soup
1/2 cup onion, chopped
2 cups grated cheddar cheese

Topping:
Corn Flakes
1/2 cup butter, melted

Mix the first six ingredients together

Put in a baking dish and top with corn flakes and melted butter

Bake at 350 degrees for 45 minutes

This makes a great side with almost any meal.

Through their recipe destination www.campbellskitchen.comCampbell gives you a fresh way to delight your family (new, kid-friendly recipes like Mini Chicken Pot Pies, and fun ways for your kids to eat Tomato soup).  One of my favorite things to do is simply to mix a large can of Campbell's Tomato soup, one pound of ground beef and a can of mixed vegetables and make a simple vegetable soup.  My girls LOVE that and it's an easy way to get vegetables in them.
