I'm excited about this blog tour because I am in a DINNER rut. I haven't updated my recipe blog in ages because for the last couple of months I have basically rotated about 3-4 things every night for dinner. It's pitiful. So I can't wait to get ideas.
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic
1 teaspoon salt
1/2 teaspoon ground pepper
3/4 lb green beans
8 small red potatoes, quartered
4 chicken breasts
Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon, garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. (I think it’s so pretty!) I also add a lemon pepper mixture on top of everything. It adds a lot of flavor.Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 40-50 minutes. Remove chicken and continue roasting potatoes/beans if necessary.
I use canned cut green beans because I love canned beans. Put I'm sure fresh or frozen would be just as good!

Ok, that looks really good! I'm going to have to make that next week!
That looks very yummy! Hmm, I don't think I even have one picture of any meals I make.
Kelly- I got this recipe off your recipe blog a couple of weeks ago and made it for my family. It was so good and they all loved it!
I am TOTALLY in a dinner rut so I can't wait for all these recipes!! I am definitely going to try yours...good and easy!! :)
Prayed for you and Harper today, so glad things went well!
So glad you did this one- cooking is my thing- seriously- every Sunday I do Sunday Supper- check them out - if you go to the blog just click on Cooking Momsense and there are all kinds of recipes- working on a cookbook as we speak! Thanks- I can't wait to try some of the recipes I've seen so far tonight!
I think I'm going to try this and add a piece of bacon wrapped around each breast. Yum!
Are the chicken breasts boneless skinless or on the bone. It seems like 40-50 mind would be a long time for boneless? Just wondering cause I want to make it, looks yum!!!
Yum! I don't cook, but I bet I could do that.
Sorry...I don't do recipes. Just kinda throw things together...but wanted to stop by and let you know I'm still praying for your family!
Psalms 116:6-9 The LORD preserveth the simple: I was brought low, and he helped me. Return unto thy rest, O my soul; for the LORD hath dealt bountifully with thee. For thou hast delivered my soul from death, mine eyes from tears, and my feet from falling. I will walk before the LORD in the land of the living.

Hi Kelly,
I am one of your lurker readers, I messaged you the other day about Adrienne. This is a HUGE favorite meal for us, my husband requests it almost weekly. Enjoy!
Chipotle Lime Chicken Enchiladas
2 - 8 ounce boneless skinless chicken breasts cut into 1 inch pieces
1 - medium vidalia onion, chopped into 1/4 in pieces
1 - 4 ounce can fire roasted diced green chiles
1 - 7 ounce can Chipotle Salsa (San Marcos brand from Whole Foods is the best I have found)
3-1/2 ounces lime juice (fill chipotle salsa can half way to get all of the salsa out)
1 - 14 ounce can Green Chile Enchilada Sauce (Hatch brand with roasted garlic is my preferred brand, also from Whole Foods)
1 - tsp minced fresh garlic
1/2 Tsp salt
1 - 10 pack flour tortillas
1 - 16 ounce package Mexican blend shredded cheese
Sour cream optional when serving
In plastic container with lid, combine can of chipotle salsa and lime juice; set aside. Cut chicken into 1 inch pieces and put into marinade. cover the chicken and place in the refrigerator for 30 minutes to 1 hour; in the mean time, Pre-heat oven to 350 degrees, chop the onion and open can of green chiles and add into skillet set at meduim-high heat, add the chicken and marinade. Cook until the chicken is done throughout, there should be a lot of liquid in the pan. Heat tortillas in the microwave to make rolling easier. Spray a 13x9x2 inch baking dish with non-stick cooking spray. Place tortilla in the dish and use a slotted spoon to add chicken mixture. Roll tortilla leaving the ends open. continue until all ingredients are gone. top the tortillas with the can of Green chile enchilada sauce and shredded cheese, spread evenly over the top. Bake at 350 degrees for 30 minutes or until golden and bubbly on top. I like to serve with a dollop of sour cream on top of the enchiladas and a side dish of Spanish rice.
OH DARN! If I remember the rules correctly I was supposed to just link to my post and not my whole blog!! SORRY!! I can't delete my entry, otherwise I would fix it! :( This is my first time doing "show us your life"
Mine is the avocado pizza, btw
So is this where I raise my hand and say, "Hi, my name is Cathy and I'm in a dinner rut too."
Cause I totally am. In fact, I just recently invited my friend over and told her to bring her recipe box so I could steal some inspiration.
Your recipe looks delicious! This will definitely be breaking up my rut.:)
I guess the Show Us Your Life schedule is off by a week because of the vacation ;-) I posted mine last week but I linked it up today. I guess you saved my diet for another week from making the dessert post LOL. Can't wait to see all the dinner ideas I get from today though.
God Bless
Daily laying it at the Master's feet!
Laura Ann
I'm right after Cathy with the "hi, my name is Gabi, and I'm in a dinner rut"
Seriously, I was searching for inspiration just last night, so this will be great! Thanks Kelly!

Oops...forgot for a minute what I was doing while joining in on the fun. #99 was me....Sorry. That'll teach me from doing more than one thing while working on the computer!
Can you remove #99? Go ahead if you can. Sorry once again. Next time I'll be more focused with that task at hand ;o)
Kelly, this looks great and even better for us- it looks gluten free!
Kelly,
I am so looking forward to trying this recipe!! We are in a huge dinner rut, and I think our taste buds are about to die of boredom!
Sitting this one out....I DON'T COOK!!! That would be my husband (he's fabulous at it) and he doesn't use recipes....
Sorry I posted so many recipes...I host every Thursday "What's For Dinner Thursday!" and share a recipe that I have made that week and have Mr. Linky up as well. I'd love if you'd stop by on Thursdays there is always a new recipe. I also host every Tuesday "52 Cookies in a Year" where each week we bake a new batch of cookies! Mr. Linky is also available.
Now off to see all these recipes that are linked up!
I love that you are still using this recipe! I never think to make it for some reason, but I love it every time I do remember.
Just a question - where did the link to "Gracyn" go? It use to be on the prayer list on the sidebar....thnks..
I'm so excited about this post. I've gotten several recipes from your recipe blog, and they were all very tasty. My faves are your bacon wrapped green beans and the stuffing chicken. YUM! My husband was very thankful I found that blog because we were in quite the rut at dinner time too.
Thanks for this post! I am in such a rut myself!
Happy Friday!
I'm glad Harper did so well yesterday. :)
This sounds so good...thanks for sharing it! I going to try it.

Your recipe sounds wonderful! I posted a link to a recipe I posted on my blog about a month ago. It's crockpot round steak and was so easy and so good.
By the way, I make your swiss stuffing chicken all the time!
I have tried this recipe of yours and it is wonderful--my whole family loved. I am in a dinner rut too--I cook the same things over and over. I need some easy and delicious recipes. Have a great weekend! So glad everything went great with Harper!

Oh this thread THRILLS me! I've been in a cooking rut for awhile myself.
This looks YUMMY!!! I think I see this recipe being used in the NEAR future at our house! We're in a rut here too. Plenty of pizza, chicken nuggets, lasagna going around. Looking forward to checking out everyone elses recipes too!!
I found this recipe on your recipe blog at the beginning of the year and we eat it all the time! I even have made it for a family when they had a new baby. We love it!
Also, Brody is sitting in my lap and I showed him the pictures of Harper from yesterday's post and he smiled and clapped! She really made an impression on him!:)
Two of my favorite things in a recipe, delicious and easy. Can't wait to try it.
I am so excited to get a bunch of new recipes!! I've been in a rut as well! I've used several of your recipes before and they have all been very yummy! Thanks for doing this!
Laura
Oh yummo Kelly! I am going to try this definitely next week for dinner. It's hard for me because it is just me for dinner, but I still cook a meal Ha! I haven't been able to post on the Friday "Show us.." blogs because I didn't really have much to say, but I am all over those one!!! Ha!. Also, pop over to my blog because it is all about food. :)
Kelly I've been eating really healthy this past week and this recipe would work for me.
Thanks for sharing it.
Come by my blog and read about the big scare about my blood pressure I just had. It applies to everyone for sure.
~Blessings my friend, ~Melissa :)
This recipe looks so yummy and easy to follow! I will definately be trying it!
Hi Kelly,
I read your blog all the time but have never commented before. I love seeing pictures of Harper as she is adorable. I have two little girls myself ages 2 & 4 and when I see how you blog monthly about what Harper is doing it makes me wish I would have started my blog sooner and done the same.
If you ever need an idea for dinner feel free to hop over to my blog as every Tuesday I post "Tuesday Tasties". My recipes range from appetzers to main meals to desserts.
Oh Kelly - we all go through cooking dry spells. check out my blog.. I have lots of wonderful recipes, complete with pictorial tutorials.
Can I just say that I LOVE canned green beans too! I love them so much that I can eat them right out of the can!
I have SOOO been looking forward to this edition of Show Us Your Life... can't wait to stock up on some fab recipes! Thanks Kelly, you're a doll!
Isn't our God good? All these women sharing together! Love it!
YEAH!!! I so needed all these recipes. A big thanks to everyone who is participating.
That looks yummy! And I think its simple enough that I could make it without messing it up!
MAJOR MAJOR dinner rut here!! I am soo excited to see all the recipes. I got 4 last night when there was only about 30 linked up. I went to the store and got stuff for all 4 and NO ingredients for my regular meals. I am SOOO excited to try out some new stuff!! Thanks so much for doing this Kelly!! So glad Harper's surgery went so well!! I get to have surgery next week~having my gallbladder out~FUN!
Hi. I am wondering about this recipe. Do you peel the lemon when you make it? I have made it once with lemon (not peeled, just sliced) and once with NO lemon. We couldn't even eat it the time I made it with the lemon, but without it, it was perfect! I used lemon pepper both times. Am I missing something?
Just made this for dinner tonight. It was awesome. I was getting so tired of my stand-by chicken recipes. Thanks for a great meal!
This is exactly what I needed! I am also in the cooking rut. Now I have lots of new recipes to try.
I still enjoy reading your blog and keeping up with Harper. Thanks for sharing with all of us out here in the blog world.
I asked my five kids if they would like this, and they all said yes!! (That never happens!!) I have a question though, because even though I have a lot of kids and should be a good cook by now, I am not. Do you thaw the chicken first, or is the 50 minutes of cooking time when it is frozen? Thanks!! =)
Yummy..yummy..yummy! I am so excited to go through these and get some new ideas
This looks so good! Thank you!
Have you heard of the crock pot 365 website? I'm so anxious to find lots of recipes from there that I can use. I'm on a mission to try to save our electric bill......we just got our third increase in rates since January! Ugh! Anyway, I read that the stove is the number 2 use of electric in the house, so I'm thinking grilling and crock pots for one month!
Anyhoo, did you get a link to the house series that you did?? I can't find the one for children's bedrooms and I'm starting to think about redoing Shelby's room.
Thanks!
Kelly,
Thanks for sharing this - I love new recipes! I actually started a recipe blog and there are some easy (and yummy) recipes on there. Most of them aren't as healthy as yours, though - ha!

Cooked this last night!! My hubby loved it!! YUM! We have been in a food rut too so this was a great change... I got so tickled because hubby said I was cooking a "gourmet meal!!" Little did he know...
I love reading your blog Kelly.
I have yet to get into more than reading them.
Ravioli Casserole
2 cans ravioli
1 lb ground beef
1 pkg shredded Italian cheese
cook the ground beef and drain. in a baking dish layer the ground ravioli, beef, and cheese. cover with foil and back at 350° until the cheese is melted.
We tried your chicken dish tonight! It was good. Thanks for sharing and helping me find some new go to menu items.
I made this for dinner the other night. I is a new favorite!!! Thanks for sharing!!!
Your recipe is great! I tweeked it a bit for us. I leave out the second lemon that is sliced. We thought it made the recipe too lemony and instead of lemon pepper on top of everything, I use greek seasoning. I have linked to this recipe in my new chicken salad recipe post because the leftover chicken is great in chicken salad. It's on my "thoughts" blog if you want to check it out.
Oohhhh! I am so, so excited about these! I am in a major dinner rut and need serious intervention ideas. Yea!
