Show Us Your Life - Dinner Recipes

(I'm sorry if I messed anyone up - I had to move the schedule out a week because of my vacation last week - I've updated the schedule here)


I'm excited about this blog tour because I am in a DINNER rut. I haven't updated my recipe blog in ages because for the last couple of months I have basically rotated about 3-4 things every night for dinner. It's pitiful. So I can't wait to get ideas.


This is our dinner at least two nights a week. It's easy and fairly healthy.

6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic
1 teaspoon salt
1/2 teaspoon ground pepper
3/4 lb green beans
8 small red potatoes, quartered
4 chicken breasts

Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon, garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. (I think it’s so pretty!) I also add a lemon pepper mixture on top of everything. It adds a lot of flavor.Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 40-50 minutes. Remove chicken and continue roasting potatoes/beans if necessary.

I use canned cut green beans because I love canned beans. Put I'm sure fresh or frozen would be just as good!

Oh, no! I thought this week was dessert recipes & I just did a whole long dessert post. Oh, well I guess I'll save it for next week instead! I'm off to whip something up for the dinner post!

I make something similar to this, except I throw in apple slices. Try it, sometime! It adds a really sweet twist to it.

Are the chicken breasts boneless skinless or on the bone. It seems like 40-50 mind would be a long time for boneless? Just wondering cause I want to make it, looks yum!!!

Chipotle Lime Chicken Enchiladas

2 - 8 ounce boneless skinless chicken breasts cut into 1 inch pieces


1 - medium vidalia onion, chopped into 1/4 in pieces

1 - 4 ounce can fire roasted diced green chiles

1 - 7 ounce can Chipotle Salsa (San Marcos brand from Whole Foods is the best I have found)

3-1/2 ounces lime juice (fill chipotle salsa can half way to get all of the salsa out)

1 - 14 ounce can Green Chile Enchilada Sauce (Hatch brand with roasted garlic is my preferred brand, also from Whole Foods)

1 - tsp minced fresh garlic

1/2 Tsp salt

1 - 10 pack flour tortillas

1 - 16 ounce package Mexican blend shredded cheese

Sour cream optional when serving


In plastic container with lid, combine can of chipotle salsa and lime juice; set aside. Cut chicken into 1 inch pieces and put into marinade. cover the chicken and place in the refrigerator for 30 minutes to 1 hour; in the mean time, Pre-heat oven to 350 degrees, chop the onion and open can of green chiles and add into skillet set at meduim-high heat, add the chicken and marinade. Cook until the chicken is done throughout, there should be a lot of liquid in the pan. Heat tortillas in the microwave to make rolling easier. Spray a 13x9x2 inch baking dish with non-stick cooking spray. Place tortilla in the dish and use a slotted spoon to add chicken mixture. Roll tortilla leaving the ends open. continue until all ingredients are gone. top the tortillas with the can of Green chile enchilada sauce and shredded cheese, spread evenly over the top. Bake at 350 degrees for 30 minutes or until golden and bubbly on top. I like to serve with a dollop of sour cream on top of the enchiladas and a side dish of Spanish rice.

I'm so excited about this post. I've gotten several recipes from your recipe blog, and they were all very tasty. My faves are your bacon wrapped green beans and the stuffing chicken. YUM! My husband was very thankful I found that blog because we were in quite the rut at dinner time too.

Your recipe sounds wonderful! I posted a link to a recipe I posted on my blog about a month ago. It's crockpot round steak and was so easy and so good.

I found this recipe on your recipe blog at the beginning of the year and we eat it all the time! I even have made it for a family when they had a new baby. We love it!

MAJOR MAJOR dinner rut here!! I am soo excited to see all the recipes. I got 4 last night when there was only about 30 linked up. I went to the store and got stuff for all 4 and NO ingredients for my regular meals. I am SOOO excited to try out some new stuff!! Thanks so much for doing this Kelly!! Hi. I am wondering about this recipe. Do you peel the lemon when you make it? I have made it once with lemon (not peeled, just sliced) and once with NO lemon. We couldn't even eat it the time I made it with the lemon, but without it, it was perfect! I used lemon pepper both times. Am I missing something?

I have a question though, because even though I have a lot of kids and should be a good cook by now, I am not. Do you thaw the chicken first, or is the 50 minutes of cooking time when it is frozen? Have you heard of the crock pot 365 website? I'm so anxious to find lots of recipes from there that I can use. I'm on a mission to try to save our electric bill......we just got our third increase in rates since January! Ugh! Anyway, I read that the stove is the number 2 use of electric in the house, so I'm thinking grilling and crock pots for one month!

Anyhoo, did you get a link to the house series that you did?? I can't find the one for children's bedrooms and I'm starting to think about redoing Shelby's room.

Ravioli Casserole

2 cans ravioli
1 lb ground beef
1 pkg shredded Italian cheese

cook the ground beef and drain. in a baking dish layer the ground ravioli, beef, and cheese. cover with foil and back at 350° until the cheese is melted.

Your recipe is great! I tweeked it a bit for us. I leave out the second lemon that is sliced. We thought it made the recipe too lemony and instead of lemon pepper on top of everything, I use greek seasoning. I have linked to this recipe in my new chicken salad recipe post because the leftover chicken is great in chicken salad. It's on my "thoughts" blog if you want to check it out.
