One last Nursery Project and a Recipe

So I had this frame hanging in my office at work with various vacation pictures. I decided to try and do something fun with it for the nursery.

I painted the frame silver and painted the mat a giraffe print and then put pink paper in the background and framed a few of our best ultrasound pictures. The 6 week picture where Harper was just a dot, the 11 week, two of her 20 week ultrasound pictures and two of her 3D pictures. And then in the middle - I'll put a picture of her once she is here - probably from her first week. I really liked the way it turned out. I wanted something special to do with her ultrasound pictures because they were so exciting for us to catch a little glimpse of our miracle! I'm going to hang it over the changing table.
I thought I'd share a quick easy recipe that I made tonight to freeze. I now have six meals in the freezer ready to eat after Harper comes! I'm hoping the week of new years to maybe do a couple more. It will just be nice to have food ready to go!

This is something my dad used to make for us every once in a while. He used corn tortillas and I think fried them in oil (maybe?) but I'm going the easy route and just doing flour. (I was making two pans so I have more ingredients up here than you need!)

Beef Enchiladas

1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas

Brown the meat and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.


Serve with Spanish rice!

Love the new frame...I love in homes how quickly the wedding/couple pics go to baby pics once God's greatest earthy miracle arrives.

Yummy! That looks good! I have been trying to figure out which of my meals freeze best so that I can be ready when the time comes in my last trimester to freeze some meals. I'll have to add this one in, too! The frame turned out SO CUTE! I love it! I love the matting you made for it!

I love that frame!! It turned out so cute and will go perfectly in her nursery!! I love how you are displaying her ultrasound pictures, I am sure it would be easy to forget how special those times were once you actually have that sweet miracle baby in your arms!

I made almost the exact same recipe last night for dinner! The only difference is that you use a can of chili w/o beans instead of the soup. I make it all the time and it is sooo good!

you will be amazed at how one day, ALL the frames that used to have pics of you and hubby or the dog in them will have pics of the baby in them. i think the only photos we still have of "us" out are our wedding pics. the rest are brax! i wonder what people do when they have a second kid...

I am very impressed with your giraffe print painting! It looks so awesome!!! Here's a heads-up I got from an ultrasound tech friend....the pictures you get from an ultrasound on that slick feeling paper will fade off that paper in time. If you want the printed image to last, you'll need to copy it onto regular paper. Didn't know if you knew that.

I LOVE what you're doing with the prayer/praise for a baby blog!!!

Those enchiladas look yummy even at 9:25 am!! I love the idea of making up and freezing several dishes. I keep thinking I need to do that. It would be a great way to start out the new year and eat out less.
